Ventresca is a small section of the belly of the tuna and is the most highly prized section of the fish. It is higher in fat content and despite its density, it has a beautiful, silky texture and a delicate flavor.
This Ortiz ventresca comes from the Yellow fin variety of tuna that has been line caught in the traditional manner in the Bay of Biscay.
