A very flavorful pate with a perfect country-style texture, made in our Cambridge kitchen using locally raised pork.
Ingredients: Pork butt, pork fat, pork or chicken liver, pancetta, bacon, salt, pepper, curing salt, cream, eggs, flour, sherry, red wine, brandy, port, pâté spice, garlic, shallot, parsley, thyme, oregano, black peppercorns, jambon de paris, wrapped in caul fat.
