From the first time we imported Bleu du Bocage it was a hit. This medium format wheel of goat's milk blue cheese has incredible balance of salty, grassy, sweet and spicy elements. As it ages the goat's milk loses its primary acidity and it mellows to a sweet fruitiness that is the perfect counterpoint to the spicy blue veining.
