Wilde Weide kaas (wild meadow cheese) is an organic Gouda produced in the green heart region of The Netherlands. It is made by Jan and Roos van Schie using organic raw milk from Montbéliarde and red Friesian cows that graze on the pastures of their farm on an island called Zwanburgerpolder. The cheeses we bring in from Jan and Roos are 6 months old and they offer a firm but creamy texture with grassy flavors and a touch of salt that suggests the sea air.
