Made in our Cambridge kitchen using Vermont Rabbit, locally raised pork, a touch of madeira and studded with California pistachios. Each pâté is wrapped in Prosciutto di Parma and decorated with Italian parsley and a thin layer of aspic on the top. This pâté is a customer and a staff favorite.
Ingredients: Rabbit, pork butt, pork fat, pancetta, rabbit liver, chicken liver, salt, pepper, curing salt, cream, eggs, flour, white wine, rum, madeira, sherry, pâté spice, garlic, shallot, tarragon, parsley, thyme, pistachios, lemon zest, fennel seed, chili flake, wrapped in prosciutto di parma and topped with a madeira aspic.
Don't forget the crusty baguette and cornichons!
