The Ligurian olive is more properly known as the Taggiasca olive which is grown in the region of Liguria in the north west of Italy. This is a brine-cured olive with thyme, rosemary, and laurel bay leaves added to the mixture to enhance the flavor. These are small olives with delicious flesh and a small pit.
