Roquefort is produced entirely from the milk of the ewes that feed on the vast plateaux (Causses- a limestone plateau ringed with cliffs) found in the Aveyron. The cheese is ripened in the natural damp, airy caves found under the village of Roquefort-sur-Soulzon. It is the quality of the milk, the processing of the curd, the adding of “penicillium roqueforti” and finally the ripening in the natural caves that give us this unique and remarkable cheese.
Vieux Berger is the smallest producer of Roquefort and they produce this beautifully creamy and piquant example of the cheese. Made using raw sheep milk from a small number of dairies near to the site of production itself in the town of Mayran. Aged in the famous natural Roquefort caves.|
