Chinese 5 Spice
Originating in China, this spice mix combines equal parts ground Chinese cassia cinnamon, ground fennel seed, star anise, cloves, and Szechwan pepper. The formula is based on the chinese philosphy of balancing the yin and yang of food. The balance of hot and cool elements blend perfectly, and can be used in a variety of ways whether in stir-fry, barbecue or marinades. It works especially well with fattier meats such as pork and duck.
