From the Champagne-Ardenne region of France, Chaource is a soft-ripened double-creme cow's milk cheese with a light aroma of mushrooms. When young, the cheese will be moist and cake-y with a flavor of fresh milk. As it ages is grows in piquancy and the texture begins to soften from the rind towards the center.
