One of our most popular brebis. It is typically older than our other brebis and this can be felt in the texture that is more firm and in the flavor that has a stronger nuttiness and a bit more salt. This is an ideal cheese for pairing with robust reds (try an Irouleguy for a regional pairing) that might not work with lighter cheeses.
