Simona and Giuseppe produce this oil using 100% organic Taggiasca olives. As a rule, Ligurian oils are lighter than their piquant Tuscan brethren and Cotta’s oils follow suit. Instead of intense notes of grass, you'll taste ripe olives, a touch of spice and a lightly bitter finish. These oils shine when drizzled over, poached fish or steamed vegetables where the heat of the food releases the magnificently fruity aromas of the oil.
