Rhododendron honey is one of the more difficult to produce as the plants thrive high in the alps, the period of bloom is short and the blossoms are delicate - so that strong winds or rains can destroy the year's harvest. At the end of June, Bonizzoni brings about one hundred of his hives to about 1200 to 1400 meters above sea level around Piedmont's Valsesia. The bees can travel up to 2000 meters to collect as much nectar as they can.

When this honey is very pure, it crystallizes rapidly and has a very delicate and floral smell and taste. If the bees have also gathered nectar from raspberry blooms, the scent becomes more intense and fruity.

In Italy, rhododendron honey accompanies the traditional dishes of the mountains such as polenta or Gorgonzola Dolce. For a more extravagant pairing, try it with Prosciutto di Parma and fresh figs.
