The Tre Pianelle is a traditional knife from Scarperia, the town north of Florence where Saladini produces their artisan wonders. This unique knife has a blade with a triangular design (hence tre pianelle, or three points). It looks sharp on both sides, but in fact, while tapered at the top and bottom, only the bottom is sharpened to a cutting blade. This beautiful, folding knife is made using water buffalo horn for the handle and measures just under 8.5 inches.
While dining in Verona at 12 Apostoli, we fell in love with the tableware and had to track it down. It turned out to be hand made by the craftsmen of the Saladini family in Scarperia just north of Florence. Scarperia is an ancient medieval village built by the Florentine Republic in the 14th century. It is known as "the town of knives" and justifiably so, as the art of manufacturing fine knives has been ongoing since the village was first settled. Their knives use the highest quality stainless steel and natural materials such as ox horn, water buffalo horn and Tuscan olive wood for their handles.
