These are organic small-batch handmade preserves made by Sylvie and Pascal Raunicher at La Ferme de Mazairas in the small town of St. Sylvestre in the region of Ardèche. Their tiny farm specializes in organic fruit, using unusual varieties with tons of fresh flavor. Their jams have less sugar and less pectin than other jams and as a
result their texture is more suited to being scooped with a spoon than
spread with a knife.
We recently began a search for quince jams and jellies. We've always known the fruit to offer beautiful pairing opportunities with cheese from our experience with the Spanish classic membrillo, but we wanted more true quince flavor and less sugar. The first producer who came to mind was Sylvie. She just happened to have a small batch from her last harvest and we snatched it up. We hope to see this every year now!
