Carolyn and Joe Hillman raise 40 Alpine and Nubian on their farm in Colrain, Massachusetts. The goats roam and play on the rocky, clover-filled hills of northeast Berkshire county, producing milk that is clean, pure, and full of sweet herbal flavors. While Joe tends the farm and milks the goats, Carolyn is busy turning that milk into some of America's very best cheese. We are consistenly impressed by the quality and bredth of flavors that Carolyn's cheeses present. She is a dilligent woman who holds herself to the very highest standards, and her cheese certainly communicates that focus.

This fresh chevre is the first of Carolyn's cheeses to be ready to eat. We get it when it is days old and we sell out quickly. It has a moist and creamy texture with a taste bud tingling brightness. We love it on our morning toast or bagel or spread on crostini and topped with olive oil and fresh herbs for an easy appetizer.
