The translated name of this cheese is one of our favorites: cellar sitter.  Walter Räss, produces this cheese in the Toggenburg region of northeast Switzerland using a recipe that is similar to the famous Appenzeller but with a more complex flavor and a creamier texture.

Look for flavors of onion, nuts, hay and some more savory "meaty" notes especially in the more aged wheels.
