The Niçoise (also called Cailletier) is one of the few olives in France wihth an AOC designation that defines the area in which the olive can be grown exclusively as the region surround the city of Nice. It is difficult to find true Niçoise olives in this country and it is even less common to find unpasteurized Niçoise. These olives are very small and have a brownish-black color with a delicate smoky flavor.
They are an excellent olive for appetizers, but they are also wonderful in a few regional recipes such as pissaladiere and salade Niçoise.
