Epazote
An herb native to Central America, South America, and southern Mexico. When raw, epazote has a medicinal pungency, similar to anise, fennel, or even tarragon. It has a strong fragrance, compared to citrus, petroleum, savory, mint and camphor.
Traditionally used with black beans for flavor, it can also be found in a variety of traditional mexican dishes like quesadillas, sopes, moles, tamales, chilaquiles, and enchiladas.
