The Ligurian olive is more properly known as the Taggiasca olive, and it is grown in the region of Liguria in the north west of Italy. This is a brine-cured olive with thyme, rosemary, and laurel bay leaves added to the mixture to enhance the flavor. These are small olives with delicious flesh and a small pit.

I find it impossible to bite into one of these olives without thinking about the warm Mediterranean sun. They have a sweet and briny flavor with light notes of soft fruit. The oil they secrete is delicate and perfect for a pinzimonio (raw vegetables dipped in olive oil with sea salt.) (Posted on 3/20/09)
