The Viola family farm is situated amidst the hills of Foligno, between Assisi and Spoleto. The property is situated at an average altitude of 350 to 500 meters above sea level and is populated by approximately 5000 majestic olive trees

On a smaller scale, Viola also grows legumes and grains such as these Umbrian lentils. These lentils are very small, flattish and khaki to brown in color. They have a thin skin and a nutty flavor, and they hold together beautifully when cooked.

Az. Agr. Viola

Located in the Umbrian region of Italy (also known as il cuor verde or the green heart of Italy), Azienda Agraria Viola is a family farm that produces extra virgin olive oil as well as organic legumes, beans, lentils and farro.

The Viola family has been farming in the region since 1850 and today manages 25,000 olive trees located on 173 acres on a hilly, stony soil at an elevation of 1,476 feet above sea level. The operate their own mill to extract the olive oil and with generations of experience, they consistently produce the highest quality olive oil that have won numerous national (Italian) and international awards.
