Each Saladini knife in their cheese collection was designed with a specific cheese in mind, and without excessive design flourishes.  This knife is designed to cut large format, soft cheeses such as creamy brie or a deeply flavored blue such as Gorgonzola Dolce. The blade is forged using AISI 420 stainless steel and the handle is made of Tuscan olive wood.  The knife is about 13 1/2 inches long with a blade of about 7 1/2 inches.

Olive wood is a natural product and varies in color and pattern from knife to knife. Never wash your Saladini knives with soap, and always dry them immediately after washing. If used daily, olive wood will absorb the natural oils from your skin, but if used less frequently, a periodic coat of mineral oil is recommended.
