Colin's chocolates are made in tiny batches where he controls every aspect of production from the roasting of the beans to the pouring of the bars and packaging.
His Silvestre is a special bar using a rare wild cacao variety found in the southern reaches of the Amazon basin along the Rio Beni in Bolivia. The cacao pods are hand-harvested by cacao hunters who use boats to access the remote trees. Colin worked very hard to get access to this batch of beans and he worked tirelessly to express all of the flavors they had to offer in his finished chocolate. The Silvestre bar has flavors of plum, jasmin, banana and toasted nuts.
