Wholegrain Otello black rice - 500g
The Otello rice variety has a black exterior to the grain and is known as a riso nero or black rice. It has a natural dark brown to black color that cooks to a slightly purplish tint. Cook this rice in boiling water for 25 minutes and then drain in a fine sieve.
We like to use this rice with ingredients that give a nice contrast of color - like a thick cut of halibut or similar fish.

Carlo Zaccaria is the third generation to manage the rice production for the Zaccaria family. Located in the Piedmont region of northern Italy.
They produce Carnaroli, Vialone Nano, Baldo, Arborio and Riso Nero di Baraggia.
