From Gray's Grist Mill

1 cup of Gray's Grist Mill Corn Meal
pinch of salt
1 tsp. sugar (optional)
2 (or more) cups milk
butter (to coat griddle)

Combine corn meal, salt and sugar (optional).  Add milk to make a thin batter (more if necessary).  Melt butter on a hot iron griddle.  Drop tablespoon amounts of batter onto griddle and cook until the edges of the cakes are crisp and lacy.
