The Marcella bean, a thin skinned cannellini bean named for Italian cooking hero Marcella Hazan, has quickly become a favorite amongst the Formaggio Kitchen staff. When cooked slowly, and without too much fussing (excessive stirring can break the delicate skins), these beans become decadently creamy. Great for soups, topping crostini, or pureeing to make a creamy bean dip.
