Yellow Indian Woman beans are a small, bullet size bean with a beautiful deep golden color that has its origins in Montana. This bean cooks up to a creamy texture which is perfect for cold salads. As with many heirloom beans, we prefer lighter flavoring when cooking them - many are at their best when fully cooked and sautéed with some onion and garlic.
