Description

From Pasticceria Perbellini, our favorite baker of Panettone in Bovolone, Italy, this Easter Dove is a sweet bread traditionally baked in Pavia since the 19th Century. It is baked using all natural ingredients and no preservatives, and is formed into the shape of a dove (some think it looks more like a cross) which gives it a special symbolism when served at the end of the holy week for the Easter celebration.  When given as a gift, the dove connotes a wish for peace for all. 

The cake itself has a softly caramelized crust dusted with sugar and almond icing. It has a light but rich crumb achieved by using a blend of very fine flour (tipo 00), butter, eggs, sweet and bitter almonds, natural yeast, cocoa butter, salt, and a touch of rum.  Different from other seasonal breads, this recipe is made without candied fruit.

This is a very seasonal product, only available for the few weeks leading up to and including the Easter holiday. The cake is wrapped in clear cello to preserve its freshness and is packed in a beautiful yellow box tied with a golden ribbon.

Pasticceria Perbellini

Nestled in the Po Valley is a sweet coffee shop that has been making panettone for years. Their beautiful sweet breads are one of the most popular gift items we offer during the Holiday season. Each panettone is simple in its presentation: wrapped in natural brown or white paper with dark blue or brown writing, with a cotton cord tie with a small twig handle made from the local muscat grape vines. Perbellini is one of the few producers we have found who works with natural yeasts to make their panettones. This traditional method sets them apart from more high-volume producers. The quality is evident when you open the package and breathe in the aroma of the bread. It has a beautiful yeasty aroma with a hint of the rum used in the recipe. We offer their traditional panettone with candied fruit mixed in, their Pandoro is a plain bread made in a taller format and their amazing offela d'oro is a slightly richer recipe with no candied fruit and a topping of candied walnuts and confectioner's sugar.
