Black, white, and green peppercorns all come from the same Piper nigrum plant, a vine that grows primarily in hot, humid, tropical environments such as India, Indonesia, and Brazil. Fresh green peppercorns undergo immersion the in boiling water for about 20 minutes. This kills the enzyme in the berry's skin which normally would turn black when dried.

These dried green peppercorns retain their strong, aromatic quality and beautiful green color, but they are less intense in flavor than either white or black pepper.  Use in delicately flavored dishes when you want to use pepper, but need less pungency.
