Rice Pudding

Eduardo Miranda of Formaggio Kitchen. Absolutely one of the finest chefs we have ever known.

1 1/2 cups Arborio or Carnaroli rice
3 quarts milk
2 cups sugar
2 sticks cinnamon
1 bay leaf

Bring ingredients to a boil. Place in a 325°F oven and stir every 20 minutes for approximately 1 3/4 hours.

When fully cooked you may choose to stir in prunes, golden raisins, apricots, vanilla, rose or orange water.  Add to taste.

Makes about 3 quarts.
