This flour is stone ground from dried chickpeas and is the essential ingredient in Panisses: prepare as you would polenta, pour onto a tray and let cool, cut into sticks and deep fry! Or try panelle, the Sicilian version, by adding chopped parsley. Best when fried in extra virgin olive oil.
