This organic goat milk ‘lingot’ (in the shape of an ingot) made in Wallonia, Belgium is covered in ash and aged with a chestnut leaf. Enjoy this cheese throughout various aging stages from fresh to dry. When young, the cheese has a delightfully cakey texture and bright flavors gently tempered by the dusting of vegetable ash on the surface of the cheese. The chestnut leaf imparts a touch of tannin structure to add to the complexity of the organic milk itself. The drier or more mature it is, the more apparent the distinct goat flavors become. The tangy flavor makes it a perfect pairing with a Sancerre wine.
