Made by Graham Kirkham at Lower Beesley Farm near Goosnargh, Lancashire. This cheese is made using raw cow's milk and traditional animal rennet.
You may find other cheeses called Lancashire, but this is the traditional farmhouse cheese that has all the qualities you want: a moist but crumbly texture, a yogurty flavor with a bit of lemony tang, and a robust, lactic finish.
Try it on a piece of crusty baguette slathered with a good mustard and a few slices of apple.
