Reflecting a mixture of herbs that are commonly found in southern France, herbs de Provence often includes basil, marjoram, rosemary, sage, summer savory, and thyme. For American markets, lavender is often added, although lavender is not typically used in Provençal cooking. Herbs de Provence is typically used to flavor grilled meats and vegetables, and to add depth to vegetable stews. It can be added early or late in cooking, and is often mixed with cooking oil at the onset of a recipe to infuse ingredients with flavor.
