Estratto di Pomodoro - 100g
Do not confuse this with your typical tomato paste. This is a traditional Sicilian preparation where very ripe tomatoes are dried by the sun. First, the tomatoes are lightly crushed, exposed to the sunlight on tilted tables so that the juice is slowly released. After a day in the sun, the tomatoes are taken in at sunset and brought back out as the warmth of the sun approaches again. The second day, the tomatoes are pressed and stirred by hand all the while exposed to the sun. A third day finishes the process with the dried paste going through a final stirring and the resulting paste is hand packed into jars.
The thick paste is a deep burgundy color and the flavor is intense of sun-dried tomatoes. A little bit of this goes a long way.
