Cumin, a member of the parsley family, is native to Upper Egypt and is especially associated with Morocco, where it is apparent in the abundant street cookery of the medinas. Cumin is the second most popular spice in the world, after black pepper. It features prominently in Indian, Middle Eastern, Mexican, and European cookery. It is an ingredient in most curry powders and many savory spice mixtures. It is used in stews, grills - especially lamb - and chicken dishes.
Cumin is essential in spicy Mexican and Tex-Mex foods such as chili con carne, casseroled pork, and enchiladas with chile sauce. In Europe, cumin flavors certain Portuguese sausages, is used to spice cheese (especially Dutch Leyden and German Munster), and is burned with wood chips to smoke cheeses and meats. It is a pickling ingredient for cabbage and Sauerkraut, and is used in many chutneys.
The intensity of cumin's distinctive flavor and strong, warm aroma is due to its essential oil content.
