This rustic looking salami is made in San Francisco in the crespone style, which is a traditional salami from the Brianza region of Northern Italy. It is made with a coarse grind of pork seasoned with pepper, garlic, and wine, all in a natural casing. Each whole salami weighs about 1 pound. Sometimes a bit under, sometimes a bit over.
