A traditional sheep's milk cheese made on the island of Corsica in the Mediterranean Sea. This cheese comes in a small format wheel (about 4 pounds) and is aged for 6 - 9 months.  As it ages, it develops beautiful salty, grassy and caramel-like flavors accompanied with a lovely wild herb aroma.
