After World War II, affineur Marcel Petite bought an unused munitions fort from the French government. He felt it would be an ideal environment for aging his 70-pound wheels of French Gruyère, known as Comté. And it is. Our first taste of Comté in the medieval, cavernous fort brought such refined, delicate, and long-lasting flavors...we were hooked! After earning the trust of their skilled affineurs , we began importing several ages of this magnificent cheese.
At any given time, we carry up to seven or even eight different age profiles of Comté, which can categorized as follows:
- Young - Comté Melodie, Comté Trois Sapins, Comté Cyclamen Marron
- Middle Age - Comté Gourmandise (aka Les Granges), Comté Fort Saint Antoine
- Mature - Comté Symphonie 16+ months (aka Le Fort)
- Extra-aged - Comté Symphonie 24+ months (aka Grand Cru), Comté Symphonie 36+ months (aka Extra Grand Cru)
This collection is a wonderful way to observe the subtle and striking changes brought on by longer aging of a single style of cheese. We've included a half-pound piece of four different age profiles including one young, one middle age, one mature and one Extra-aged when available. If the extra-aged profile is not available, we will include an additional piece from the young or middle age category.

Our first tastes of the ComtÃ© in the humid, medieval, cavernous fort brought forth such refined, delicate, and long lasting flavors that we were hooked. After much trust-building with Philipe and Claude, we are able to bring in wheels of ComtÃ© from the fruitiÃ¨res that we have found to suit the palate of our customers.
