The Salted Maple cracker is perfect when paired with young goat cheeses or with stronger blues. The subtle sweetness plays as well off of the bright acidity of the goat as it does the deep pungency of the blue.

Whitney Lamy created her crackers using a recipe from the 1800's when Josiah Bent created a lighter and thinner version of Hardtack, a soldiers and seafarers staple.
Just as Bent did, Whitney rolls out sheets of dough, bakes them and hand "cracks" them.
