Carnaroli rice is not only great for soups and stews, but also an excellent choice for risotto. The high amylose starch content allows it to keep its shape while absorbing flavors well and resisting over-cooking. The larger grain will make for a more textured risotto that is fluffy, but not sticky.

Carlo Zaccaria is the third generation to manage the rice production for the Zaccaria family. Located in the Piedmont region of northern Italy.

They produce Carnaroli, Vialone Nano, Baldo, Arborio and Riso Nero di Baraggia.
