Siberian sturgeon (Acipenser baerii) originates from the river basins of Siberia and Lake Baikal. They're of medium-sized, usually weighing between 17.6 to 88.2 lbs. They boast medium- to large-sized roe: 2.7-3.0mm, which are firm in texture and range in color from dark grey to light brown.
