Berkswell Aged English sheep Milk Cheese

Made by Stephen Fletcher and Linda Dutch at Ram Hall, near Berkswell, England. This flying saucer shaped cheese is made using raw sheep's milk and animal rennet.
It has a hard, sometimes granular, texture with flavors of roasted nuts and caramelized onions. While a nice addition on any cheese plate, we especially enjoy grating it over soups and stews.
