These are organic small-batch handmade preserves made by Sylvie and Pascal Raunicher at La Ferme de Mazairas in the small town of St. Sylvestre in the region of Ardèche. Their tiny farm specializes in organic fruit, using unusual varieties with tons of fresh flavor. Their jams have less sugar and less pectin than other jams and as a result their texture is more suited to being scooped with a spoon than spread with a knife.

This gelée is made from the juice of ripe organic red currants cooked with organic cane sugar and a touch of pectin for a loosely textured jelly with a full, bright flavor of red currants.
