This chutney is made by cooking Sisco onion and a French balsamic style vinegar aged for 6 years in cognac casks and branded as Baume de Bouteville (based in Charente). This jam offers a bold yet balanced explosion of flavors from the vinegar, to the onion, to the sugar and the peppercorns. The onion is judiciously cooked so that it maintains a delicate crunch. Try this with stronger cheeses or alongside rich meats, pates and even foie gras!

Few people have heard of the Sisco variety of onion and fewer still know the story of its origin. Trust Christophe and Aurélie to include the Corsican tradition into this deliciously complex savory jam. The onion is in fact cultivated throughout Cap Corse the name Sisco is a reference to a small village of Sisco on the eastern coastline of the Cap. The story goes that a farmer named Olivier Bardin resuscitated the cultivation of this onion variety using seeds that had been preserved by his family when they were living in Sisco.

Anatra Conserverie Moderne

A dynamic young company, ANATRA Conserverie Moderne is the labor of love for Aurélie and Christophe, aesthetes and gourmands, keen on culinary innovation, who have joined forces to create a range of fine products.

The original idea was to produce jams by respecting the seasonal cycle of products. Over time, they have decided to respect this traditional approach while bringing their own innovation and whimsy to their offering.

Working with local Corsican producers favoring organic and sustainable agriculture, they create their jams in batches not exceeding 4kg of fruit when cooking. This technique allows them to allow the true expression of the fruit without using excess sugar or any dyes or preservatives.
