We love all of the squash seed oils from Stonybrook, but it is this acorn squash oil that has consistently blown us away with its balanced flavors of earth, fresh squash and toasted nuts. It is produced in upstate New York in tiny batches by drying, roasting and cold pressing the seeds of organic acorn squash from a nearby farm.

The oil has a beautiful deep amber color with green highlights and the aroma is intense and complex with nutty notes of roasted and raw squash.  We love to use this oil as a finish on soups and salads but it also has a high enough smoke point (a bit higher than olive oil) to be used for sautéeing vegetables.

Stonybrook Wholehearted Foods

Stonybrook creates specialty oils made from a variety of New York grown squash seeds, gently roasted and expeller pressed at low temperatures to preserve depth of flavor and healthful properties. Each oil is made in small batches and is bottled by hand at their Finger Lakes shop.

All of their seeds are non-GMO and are not treated with any chemicals or preservatives after being separated from the squash.

For years, these seeds were destined for the compost pile...until a local squash farmer wondered why the seeds couldn't be put to good use... After working with the helpful folks at the Food Venture Center at Cornell University the concept of producing oil from seed waste was created.
