Spain was a relatively recent discovery for us and now that it has our attention, it has refused to let us go. We can’t get enough of the style of its old metropolitan centers or the rustic intensity of its countryside villages. Tapas offer an endless array of little plates — some simple, some composed — with the attention to detail of the finest entree. Finding small-scale artisans can sometimes be a challenge here, as much of Spain’s exports have focused on larger cooperative and industrial production.
Even after spending years travelling to Spain, we still feel there are many more discoveries to be made. As America’s appreciation of Spain grows, we hope to find more of these artisans and to bring their wonderful food experiences to you.
