Incredible eggs from very happy hens.


In the winter of 2007 we took a short day-trip to a new supplier of eggs who we were introduced to at a Vermont farmer's market. Wicken Fen is a small farm located in Topsham Vermont where Fran Hurlburt raises heritage breeds of sheep, goats, chickens, ducks and geese. The animals are all allowed plenty of space to roam and peck and squawk.


The chicken eggs are particularly beautiful as each hen produces a different egg both in size and color - some are blue, others tan, some white, some speckled and others light green. The eggs are carefully packed in small boxes and rest on a bed of hay that offers up a wonderful smell of hay that transports you to Vermont. When you cook with these eggs you will notice a few things that make them different from any other egg you've had - the yolks are a deep orange color, the egg holds its shape very well (an indication of freshness) and the taste is rich and flavorful. These eggs are provided to us in very small quantities and we frequently sell out so we recommend giving us a call and having some set aside for your next visit.
