This raw milk cheese was inspired by the traditional Raclette cheese of the Swiss Alps. Spring Brook Farm's Reading is a washed rind, firm, cow's milk cheese from Reading, Vermont. It is the closest example of the traditional Swiss Raclette we love with a mildly aromatic rind and a flavorful and creamy texture that is perfect for melting. The creamy, earthy, nutty flavors pair nicely with our house-made Pâté de Campagne and a few cornichons on the side.
