Made by Nathalie Herre in Cosprons, this vinegar is a recent addition to her wonderful selection of vinegars. Tchin Tchin is named for a visiting bird in the area, the African Waxbill. For this vinegar, she adds sweet must of grenache gris to a banyuls mother. It is aged outdoors in oak barrels .
These natural processes diverge completely from those of industry which hustle the wine during 15 days giving of the acid and not very aromatic vinegars.
The natural process that Nathalie Herre uses makes it possible to produce a vinegar with the soft and fruity flavours: “the rate of acidity does not exceed 6,5%”.Very biscuity and sharp berry in flavor. Perfect to be tossed on arugula salad.
