Mimolette has a similar appearance, at first glance, to a cantaloupe! It is round with a thick, dimpled rind. When cut, it reveals a vibrant orange paste. The orange color comes from the natural colorant, annatto.
It is a very hard cow's milk cheese with a rich, caramel flavor, somewhat similar to that of an aged gouda.
